Buffalo in Red

Ingredients:
675g/1½lb Buffalo Sirloin, cubed
2 Bay Leaves, crumbled
5 Potatoes, peeled and cut into medium chunks
2 Onions, sliced
1 Green Capsicum (sweet pepper), roughly chopped
675g/1-1/2lb Mushrooms, sliced
1 Bottle Red Wine (check manufacture)

Instructions

1. Preheat the oven to 180C, 350F, Gas mark 4.

2. Heat a large frying pan until very hot, add the meat and brown to seal on all sides. Transfer to an ovenproof casserole.

3. Place the potatoes, onion, pepper and mushrooms over the meat. Pour in the red wine, cover and bake for 1 hour, or until potatoes are tender. Serve hot.
